Launch stacher, go into the Settings -> Advanced tab. There is a setting for to change the youtube-dl command line, it's locked by default to prevent accidental changes. Click the unlock icon to enable the input field and enter the path to the yt-dlp command line. ( ~/.stacher/yt-dlp )

It might be a good idea to go with MKV rather than MP4. This is because .ts files can contain multiple audio tracks (the vast majority don't, but some do), as well as subtitle data (which exists as CEA-708 data, at least in America). I don't think you can save all of that with MP4.
The only way to convert an audio file (in this example an MP3-compressed audio file) into a MIDI file (which remember is just instructions to play 'something' one a time), is to detect the sounds in the one-long-audio data of the MP3 file, trying to isolate the individual 'notes' that are being played/sung/etc in the audio.
Once you get it installed, I think the command you want is: ffmpeg -i “filename.mp4” -vn -acodec copy “filename.m4a”. This command should only copy the audio stream into your new m4a file. It will not reencode the audio, so there will be no quality loss. Also, because there is no reencoding, this should be a fairly quick process.

In one case, the author & publishers, et al, get paid, and in the other example, they don't. Realistically, the scene people who are posting torrents are not posting on reddit asking how to convert AAX files. Directing other people on how to convert an AAX to an MP3 is likely not preventing an author from getting paid.
Just on my portable MP3-Player for saving space I convert to mp3. For "on the go", the sound quality is absolutely enough for me. I backup my whole flac collection multiple times on multiple locations so all good :) Well, aac also seems to be a good choice though! For now, since I started with it, I want to stick with mp3
